Our day at Brianhead

Yesterday we took the long awaited trip to brianhead. We have been wanting to take the kids to lessons. Lily chose to snowboard and Anthony had to ski. He was too young to snowboard. He calls is "Skeeting". We are so proud of them both. They both were extremely nervous. In fact Anthony cried after we dropped him off and Lily was starting to cry. For a minute I thought, "What a waste of money." We left them there and not much longer we were watching them on the bunny hill with their instructors. Lily was very nervous since her instructor was a "boy." Angel and I headed over to the other mountain to enjoy our time. He boarded and I skied. I have been so nervous about it since I haven't been for over ten years. I thought for sure I would break or pull something. I didn't fall even once. When we got back to the bunny hill the kids were doing great! They had a great time. We hope to take them night skiing soon so they don't forget what they were taught. I am so proud to them for sticking with it no matter how scared they were. I believe this is how we build our kids self esteem, Helping them do things they are scared to do. The video is kind of long, but you see Anthony do really well at the end.

We took Lily and Anthony to Brianhead for skiing and snowboarding lessons. Heres a video of both of them. Lily is snowboarding with the white jacket and Anthony is the little skiier in all black with the yellow banner thing. Its kind of slow at first, but you see Lily more at the end of the clip.

why does good food have to be so bad?

Angels brother Dany hasn't been coming to visit us much lately. He had his two kids for the weekend and so we invited them to stay with us for the weekend. I decided to cook some good food in hopes that he would like it and come around more often. We'll see if it worked. This is his adorable son Daniel.


Shredded beef taquitos, quacamole, black beans and queso fresco.
I pressure cooked a roast in 20 minutes and then Angel made the taquitos and quacomole. I made everything else.


These were Empenadas stuffed with ground beef and queso fresco. I made the salsa by charring 5 different chilis and blending it with cilantro, garlic and canned tomatoes.




We made little plates for everyone in the neighborhood. We hope the enjoyed them.

Feeling kind of weird

Have you noticed the new song the comes on when my blog opens? It is called, "Stop this Train" and is written and sung by one of my favorite artists, John Mayer. Anyways, if you listen to the words it's a really beatifull song and describes kind of how i've been feeling lately. I watch my kids and see how fast time is flying bye. Sometimes I want to stop the train. There are also times that I wish I could not only stop the train, but put it in reverse and stop it for a while in some certain times in my life. I dont really have any regrets or want to change anything that i've done, mostly I wish for some more quality time with my mom. If only I had known how quickly she would be taken away from us. Dont get me wrong, I totally count that as a blessing. That is the way she would have had it, I just wish for more time with her. Life seems to be going so quickly. I want my kids to stay little forever!! I love all the funny things they say and do. I also love how much they love and need me. It makes me feel pretty darn special. Im sure there are many wonderful things ahead. Maybe I dont really wish the train would stop, just slow down a little. Remember to tell those that you love how important they are and spend as much quality time with them.
